Holy Week is just around the corner. And as a Filipino/Catholic tradition, we go meatless as part of penance for our sins. But abstaining from eating meat shouldn't be that hard when you have other options to spice up your food. Here, let me share with you one simple healthy recipe using UNI-PAK Mackerel.
MACKEREL DYNAMITE ROLL
Ingredients
2 cans of 155g UNI_PAK Mackerel in Natural Oil, drained and mashed
2 tbsp onion, minced
1 tsp garlic, minced
1 box of cheese, sliced into strips
20 pcs green chili, seeded and sliced lengthwise from tip to stem
10 pcs lumpia wrapper, cut into halves
oil for deep-frying
salt and pepper to taste
Procedure
1. In a bowl, mix together mashed mackerel, onion, garlic, salt, and pepper.
2. Fill each chili with mackerel mixture and a strip of cheese.
3. Wrap chilis in lumpia wrapper and seal edges with a little water.
4. Repeat procedure until all chilis are filled.
5. Deep-fry in hot oil until golden brown.
This dish is a yum! The fish was so tasty and wouldn't really noticed that its not meat. Plus its healthy! Definitely a great alternative for meat/beef!
